For those of you worried about my sanity, I think that I found the cure.

If you read my latest post you will see why my sanity is hanging by a thread.  To add salt to the wound today I found out that my child’s teacher, disregarding my wishes, has singled him out for more testing.  They are aware that I am getting outside, objective, testing done to see just where my son should be and the teacher took it among herself to sneak around and do her own.  If I find out that the administration was involved… See why I need a drink?

The super powers in this concoction will solve a variety of my problems and possibly even keep H1N1 at bay.  The fresh grated ginger provides a spicy kick and the POM 100% pomegranate juice adds a beautiful color and another big boost of antioxidants.  If you are going to drink, like I need to, then this is the best answer I could come up with. I love the herbal, earthy accent that gin provides.  This could also be made with vodka or your favorite spirit.

I make this with a rustic twist, but just combining all the ingredients in the largest glass available.  This could be dressed up by making it in a cocktail shaker and strained into a martini glass.

My GINger POM Cocktail

  • 1 large glass, highball
  • 2 cubes of ice, too much will dilute your drink and leave less room
  • 1 jigger of gin, or 2 fingers, heck just pour it in
  • equal part POM 100% juice
  • 1 tsp fresh grated ginger, or more if you can handle it
  • top off with lemon soda, I love O Organics from Safeway it is not too sweet and nice and tasty

Veron, for sure! It is so refreshing and the complex flavors keep me going back for more. Feeling more sane with each sip ;-) But I am sure Paris would do it for me too!

I seem to be the only one on this planet who has never tried POM juice. I must correct that…what with all the great recipes orbiting….looks good!

For sure, get out there and get some POM, or squeeze your own :) But, be forewarned that it is messy and time consuming. cheers!
