hiding the zucchini

Last Wednesday was the first day of school, it just me and my 5th grader at home. My husband and our 6th grader were still in the southern hemisphere enjoying the last bit of their month long trip.

It was hot and I was lazy, you’ve been there right? I found a bag of Trader Joe’s Mandarin Orange Chicken in the freezer, perfect. In order to not feel like we were eating junk food on the first day of school I paired it with julienned raw zucchini for noodles. I wasn’t really trying to hide them it just happened to work out that way!

There is not a recipe here, just finely sliced zucchini into matchsticks, toss with a little olive oil, salt and pepper then serve with whatever moves you. My son suggested that they would be good floating in a veggie soup. My mom makes a great pasta with fresh, uncooked tomatoes, garlic and basil that I think would make a fabulous raw meal by subbing in the zucchini for the pasta. Perfect for a warm summer day!
