With all the fresh greens right now I have been making stir-fried greens often, a little too often according to some. My CSA has been giving us beautiful, washed greens ready to create something with little effort. This is a simple, fast recipe that is a staple around our table.
- 4 large handfuls of stir fry greens (like spinach, poc choi, bok choy, brocollini, chard, etc.)
- 1 thumb sized piece of ginger, peeled and minced
- 2-3 cloves of garlic, minced
- 1 Tbsp peanut or vegetable oil
- 1 Tbsp oyster sauce
- 1 tsp soy sauce
- 1/2 tsp sugar
- 1 Tbsp water
- sriracha or other chili garlic sauce, to taste (I used 1 tsp), optional for sissies
- juice of 1 lime
- green onions, sliced thin or cilantro leaves
Combine the oyster sauce, soy sauce, sugar, water and sriracha in a small bowl and set aside.
Heat a wok or other heavy bottomed large pan over high heat. Add the oil, garlic and ginger, stir fry for 30 seconds, until fragrant and the garlic is starting to turn golden. Toss in the chopped greens, stir fry for only a minute or so if your greens are young, maybe a little longer if they are more mature. Pour in the prepared sauce and cook for another 30 seconds or so.
Remove from heat, sprinkle with fresh lime juice and toss the scallions or cilantro. Serve over rice or noodles, rice noodles are my favorite, but any will do.

This looks fantastic. Was about to saute my swiss chard in garlic and balsamic. But this sounds wonderful. May have to try tomorrow…just need to get some ginger.
yum! poc choi is one that has never shown up in my shares. i want to eat at your house for dinner tonight!
