Ultimate One Pot Meal

This is the best fast weeknight dinner full of nutritional variety. It can be whipped up in less than a half hour easy. Another plus, the ingredients are easy to have in your pantry. Sausage or other meat in the freezer or leftover meat from a meal earlier in the week, most everything else should just be sitting in your pantry or fridge waiting to be consumed. Be creative.

If you want a vegetarian version, saute your favorite veggies in place of the meat.

  • 1 lb (500g) hot Italian sausage, ground beef, chorizo, or any meat you like
  • 1 onion, chopped
  • 1-2 cloves garlic, minced
  • 1 14 or 28 oz (400g or 800g) can of whole tomatoes, depending on your own tastes.
  • 1 can chickpeas/garbanzo beans, drained (any beans will work here)
  • pinch of thyme, oregano and/or marjoram (savory would also be good here)
  • handful of swisschard, torn into pieces (again any hearty green; ie: spinach, kale, romaine)
  • salt & pepperHeat a large sauté pan over moderately high heat. Add the sausage cook, stirring occasionally. When the meat begins to brown add the onion and garlic and sauté until translucent. Pour in the tomatoes and chickpeas. Stir in your favorite herbs and spices. Cook until everything is hot and slightly thickened. Into the pot tear some greens, and cook until wilted. Taste, season & serve. It is that easy! Even tastes great the next day.

    We LOVE meals like this and have developed a new name for it: man food. Silly, but it means that I used what we had, it took little preparation, and was completely satsifying. Great idea to use the chickpeas. I happen to have a can in the pantry…

    Kellypea, “man food” perfect! 2 of my men are still small but they can sure shovel it in. I do not know what we are going to do when they are full size.

    EMC, yep. gotta love fridge emptying meals. Gives me a reason to do my favorite past time – grocery shopping!

    Good stuff. Chickpeas and chorizo have been a staple in my household lately. I’m gonna have to switch it up a bit and try the oregano / tomato combo.
