Blueberry & Banana Smoothie

What could be better than a bag of frozen blueberries in the freezer to make a winter day into summer? OK, so it isn’t exactly winter anymore but it sure isn’t summer either. Blueberries are indispensable in my house for anything from a quick smoothie to a smashingly speedy dessert.

This is my favorite go to morning smoothie. It is so simple and tastes so fabulous. The Moscow Food Coop makes a similar combination of banana, blueberries and orange-carrot juice called the Bunny Blues, yep I stole their idea. Do try the carrot juice though; you will be pleasantly surprised by the sweet, not overly carroty, taste. If you are not used to carrot juice I encourage you to try it. This is a lovely combination. The plain carrot juice is better I tell you! I have tried this with orange juice but carrot has won me over. I find fresh carrot juice in the produce section of the supermarket.

To make this more substantial add a handful of rolled oats, ground flax, or protein powder.

Blueberry & Banana Smoothie

  • 1 handful of frozen or fresh blueberries
  • 1 banana
  • ½ to 1 cup carrot juice

Blitz in the blender. Add any other fruit or ingredients and blend until the consistency of a milk shake. Enjoy with your morning paper, if you have time for such a leisurely thing.

Lately I have been saving my old bananas not for baking but rather because they make the smoothie super sweet.

I have never tried it with the carrot juice but rather milk.

Morning smoothies are my soft spot. When I don’t have time for a full breakfast, fruit smoothies fill the bill nicely, especially with some French Vanilla protein powder added. Delicious!

What a gorgerous color!!! I love smoothies and used to make every morning to drink on the way to work. I should start doing that again. Sure was a good way to start the day!

smoothies are my favorite… but yesterday I made one kinda like this and then I accidentally kicked it off the coffee table with my food. My carpet was purple…!!!! Luckily Oxy-clean is the best invention in the world…

and the carrot juice is just such a great idea… I am going to have to add that next time!
