
Rice crispy treats are the standby for soccer games, school parties, anytime. Why not try other mediums, other cereals are always an option, but what about popcorn? When I was a little girl my mother always made popcorn balls for Halloween. That got me thinking…
It so happens that my son should not have dairy. So for school parties I try to make something for him to bring that he too can enjoy. There is a girl in his class who is Gluten intolerant and he is very sensitive to that. So here is a great variation on the standard rice crispy treat vs the popcorn ball. This is what my kids are enjoying today at their school Valentine’s Day parties!
Popcorn Treats
8-10 cups of popped corn
1 10 oz bag of mini marshmallows
1/3 cup unrefined brown sugar
4 Tbsp butter or substitute
grease a 9×13 in baking pan and set aside
Pop the corn by your favorite method. I pour 1/4 cup kernels into a small lunch sack, fold the end down to leave room for the *pop* then stick in the microwave about 2 minutes, until popping just stops. Empty into a very large bowl being very careful not to empty any unpopped kernels into the bowl. Do this as many times as necessary to get 8 cups of popped corn. For me it was twice.
In a saucepan on the stove melt the butter. Add the marshmallows and sugar and stir over moderately low heat until melted. Carefully pour hot molten marshmallow over the popped corn and stir quickly until combined. Scoop out onto greased baking pan and squish into the pan evenly. Allow to cool, then cut into squares and serve.
