Pasta with Peas: take II

Another entry in our month full of kid friendly meals, it’s not that my kids won’t eat other food, but why bother? With the man of the house globetrotting I am just not into spending time and effort on meals for the kids. So here you have it, another 15 minute meal, Pasta with peas again. So simple and different every time. The beauty is that the kiddos love it and happily take the left overs in their lunch the next day, two birds with one stone! Even my child who is not so excited about veggies loves peas.

I am going to give you the version I made in 15 minutes, but feel free to adjust where you like. Change the ingredients, adjust seasoning, etc. Could be a fridge cleaner outer. Be sure to use a large pan to cook the bacon and onions, you want to be able to add all the pasta to toss, otherwise you can add the saute pan sauce to the pasta in the pot.

Pasta with Peas: II

serves 2-4, depending on hunger level of your eaters you might want to double
time: 15 minutes, plus time to boil water

  • 3 strips of thick sliced smoked bacon
  • 1/2 med onion, small dice
  • 1 clove garlic
  • 1/2 lb smallish pasta, I used strozzapreti
  • 1 cup frozen peas
  • 2 tbsp dry wine, chicken stock, pasta water
  • 1/4 cup grated Peccorino Romano cheese
  • fresh herbs, such as thyme, mint, oregano, etc

Start a large pot of water to boil.

Meanwhile, dice the onion, mince the garlic and slice the bacon into little strips.

Once the water comes to a boil, salt the water and add the pasta. Cook according to package directions. Do not over cook. Leave it slightly underdone, otherwise when the dish is finished it will be mushy. Somewhere around 8 minutes depending on size.

While the pasta is cooking, saute the bacon pieces in a LARGE pan over med high heat to render the fat and lightly brown the bacon. Add the onion and garlic, saute until translucent. Add the peas and a splash of wine or other liquid. Scrape up the bits off the bottom of the pan.

When the pasta is finished, drain. Be sure to reserve at least a cup of the pasta water. Add the drained pasta to the peas and stir well, add the cheese and herbs and combine well. Add pasta water, about a half cup until you have a nice and saucy consistency.

Serve straight away and enjoy!

I made a very similar dish this week! In fact, it’s almost identical. We seem to have a lot of overlaps here!
