I was sitting in the Orthodontists office the other day, I guess I had nothing better to do. Anyway, while flipping though the pages of Eating Well Magazine I saw a recipe for microwave potato chips. Really? That doesn’t seem possible or even tasty, yet I was so intrigued I had to give it a try.
Do those tasty looking chips look like they came from the microwave, come on, really?
With the Superbowl on it’s way and you on your way to Safeway, or where ever, to stock up on those bags of chips, STOP! and check this out first. This may sound crazy, daunting or even tasteless. I am here to surprise you, these are actually easy and tasty. You control the salt and fat
Now it is imperative to start with a mandoline like this one fro m OXO, or a food processor. Getting slices the same thickness will make a huge difference, and you want them thin, about 1/8 inch thick. Toss them with some olive oil. I used a russet potato, Eating Well suggests, Yukon Gold or red potatoes.
Next, cut a piece of parchment to fit the merry-go-round in the microwave, then lay the potato slices out on the parchment sprinkle with some sea salt or seasonings of your choice. I made some sea salt and some with Szechuan Peppercorns w/ sea salt.
cook in the microwave on high heat for about 3 minutes, turn over and cook another 1-2 minutes
here, this is what you get. they do crisp up a bit as they cool

You must understand that I am not a proud microwave user. My microwave is hiding in the laundry room, too ashamed to come out of the closet. I use the thing for melting butter, making popcorn. The kids use it for warming up their cereal before school. Otherwise it sits there, alone.
I have to say, this technique actually works and isn’t half bad. I would make them again. Let the kids make them, but adults only on the mandoline please that thing is dangerous!

I’m always attracted to techniques I haven’t experimented with, out of culinary curiosity I guess. I’ll have to try this method too, just to prove to myself it can work!
