Classic Cheese Fondue

We have been so busy lately. The chaos of the season blended with extreme weather. I haven’t had time to do the simplest things let alone post anything. I made this for St. Nikolaus Day (Dec. 6) and I am just getting around to posting it. It is perfect for a holiday party.

Left over bits of cheese in your fridge? Stale bread on the counter? The Swiss have a great way to remedy this problem, if you think that a predicament. I prefer the cheeses listed in the recipe; nevertheless you can make it with almost any. I make it with whatever I have on hand. This is a good classic Swiss fondue. In need for a fun filled evening or a romantic dinner for two? This is exactly what you need.

Don’t do as I did and forgot to add the cornstarch, it gets a little clumpy. Good thing it still tastes fabulous.

Classic Fondue Recipe

  • 1 clove garlic
  • 2/3 cup Sauvignon Blanc or other dry white wine
  • 1 tsp fresh squeezed lemon juice, optional
  • 8 oz Emmentaler cheese, grated
  • 12 oz Gruyere cheese, grated
  • 1/4 cup kirsch (cherry brandy)
  • 1 Tbsp cornstarch
  • pinch of cayenne and paprika
  • a few gratings of nutmeg
  • stale bread, loaf of crusty country bread (we like rye bread)
  • variety of other options for dipping: apples, pears, cooked brussels sprouts, broccoli, baby potatoes

Rub a clove of garlic on the inside of the sauce pan that you are going to make the fondue in. Add wine and lemon juice if using, bring to a gentle boil over moderately high heat. Gradually add the shredded cheese, stirring constantly until it is combined.

In a small bowl or cup combine cornstarch and kirsch, as soon as cheese begins to bubble add the cornstarch slurry. You need the bubbles for the cornstarch to do it’s magic. Continue to stir and cook over med low heat a few more minutes. Add the spices and combine well.

Transfer to preheated fondue pot. Dig in.

wash it down with a little French wine if you're feeling authentic

I love cheese fondue! We definitely need to make it more often than we do…which is hardly ever. Looks fabulous!
