This Figgy Onion Jam is great as an appetizer. One day when there were some figs on the counter that were no longer as perky as they once where, the rest is history. This is great served alongside some nice crostini with a glass of your favorite wine. I served it with a chunk of Spanish Manchego, but Roquefort or another blue would go just as well. Add some prosciutto for another dimension. This would be great for a holiday party.
2 tsp extra virgin olive oil
1 small onion or 2 large shallots, minced
1 garlic clove, minced
1” piece of ginger, grated or finely minced
¼ cup brown or raw sugar
pinch of cinnamon, or more to taste
1 star anise
1 tsp mustard seeds
1 pint fresh figs, green or black, quartered
¼ cup of balsamic vinegar
Sautè the onion and garlic in a little bit of olive oil until soft and transparent. Add the spices, and cook for a few more minutes, add the figs and vinegar. Simmer for 5 min or so. Add some water if it is too dry, should be enough liquid to simmer. Taste. Adjust seasoning. Serve warm or at room temp.
Would also be great served alongside roasted pork.

i would eat a combo of fruit, crusty bread, stinky cheese and wine for dinner any night of the week! i’m sure my waistline is thankful for my boys who keep my diet far more varied (and inclusive of vegetables) thx for visiting my egg post
