Black Truffle

by Kristen on November 23, 2008

I couldn’t resist. At $169 per pound it is quite an investment. I only bought a small fraction of that, one of the smallest ones there (the picture is deceiving, it is sitting in a demitasse saucer). I have never seen them in the supermarket before. I just had to, it called to me.

I couldn’t believe that I did it. Hello, I’m not talking chocolate here, this is fungi.

I will post later when I decide exactly what I am going to do with it. Any ideas?

Shaved, pasta, cheese, garlic…there was a restaurant in Seattle that made a Lobster Mac & Cheese with shaved black truffle…yum! It was one of my favorites.

You could also make some infused oil with a bit of it.

Wow – I’m impressed!! I’d be far too nervous to splash out on this. I’d do a very simple risotto and shave this over the top. Or agree with the previous commenter – keep a little aside and infuse some oil.
