Tuna Potato Bake

Dad is out of town, Mom makes easy food. They love it. This is a take on the sh*t on a shingle of my childhood. I think that this is better and even easier to make. I used Alexia oven fries, but you could do it the hard way by making your own potato wedges. It really isn’t that hard, but Alexia is a local company who makes a quality product out of real ingredients. If you haven’t you should try them. They are great if you have little time on your hands, or are just lazy. Just look in your supermarket freezer, I have even seen them at Costco.

1 pkg Alexia Oven Fries any flavor, I used olive oil & sea salt
1 can solid tuna, drained
2 Tbsp Mayo
small handful of frozen peas
1/2 cup grated cheese, your favorite (I used P’tit Basque, a sheep’s milk cheese from France)

Preheat oven to 400F.
Roast the potatoes according to package diections.
Meanwhile, mix remaining ingredients in a bowl. When the potatoes are a little crispy transfer to a baking dish or individual ones. Spoon the mixture over the top and bake for 5-8 minutes until hot and gooey! Eat up.
