Herbed POPCORN

by Kristen on October 31, 2008

The greatest after school snack ever, not too bad with a movie either. Always looking for new ways to spice things up I am happy that I tried this. This is fabulous and no need for butter! This is not fat-free popcorn, but it is tasty and no saturated fats!

I take a couple tablespoons of olive or grapeseed oil in a pot. A good sized heavy pot is important, I use a 4qt. All-clad that is perfect. Add enough popcorn to coat the bottom of the pan, a couple handfuls. Drop in some fresh herb, hardy herb work well here. I used rosemary, thyme, sage and some sturdy oregano. Makes for a very aromatic and tasty treat.

Now, turn up the heat, and don’t forget to cover the pot. Keep it over pretty high heat until you hear steady popping, then turn it down a little. Not too much because you want to keep the popping steady. When the popping slows or lid is pushed up by the kernels, it is time to remove from heat.

Toss with fine sea salt. I actually enjoy a coarser salt, but it doesn’t stick to the kernels well. Be sure to salt right away, as it cools the popcorn is less likely to attract the salt.

Popcorn is actually easier than you think to make from scratch. The microwave isn’t the only way to make popcorn. This is quick and healthy.

Update…

Tonight, after the kids went to bed, I tried it with a Thai chili sliced halfway through the long way. Nice kick, not for wussies!

It is a winner!
