When life gives you more beans than you know what to do with, a side dish like is indispensable.

This is a fabulous, no measuring necessary, last minute side dish. You can make as much or as little as you like. Add herbs, garlic, dried chili flakes, etc for extra yummy flavor. A squeeze of lemon juice on top just before serving gives a very bright flavor.

High-Roasted Fresh Beans

  • 1 lb beans, ends trimmed, cut if you wish (I leave them whole)
  • 1-2 Tbsp oil of choice, either Grapeseed or Olive would be my choice
  • 1 clove of coarsely chopped garlic (optional but tasty)
  • pinch of coarse sea salt

Heat the oven to 400-425°F depending on your oven. Put a baking dish, something that can withstand the heat into the oven to pre-heat. When hot add oil & beans, toss to coat. You can toss the beans in oil before adding to the hot dish if you wish. Add the garlic if using, toss with the beans. Cook for 5-10 minutes, until garlic is golden and beans are showing a some color.
Toss with sea salt & serve
