When is a problem a good thing to have? When you have too many fresh vegetables from a local farm. We bought into a CSA (community supported agriculture) this year. Every week during the growing season we get a share of the farm. Just look at all the goodies, even with the unseasonably cold weather that we have been having. Two weeks ago this area was blanketed in white stuff, yep snow in the middle of June. What a crazy time!
This week we’ve got Chinese cabbage, radishes, pea pods, broccoli, bok choy, baby beets & greens, baby leeks, and 2 large bags of salad greens! What to make for dinner? How about some poached wild salmon, steamed beets, leeks, bok choy, carrots, peas and garlic. I steamed them above the salmon while it was poaching. Served with a green salad with a mustardy vinegarette, pan fried Yukon Gold potatoes, with a caper aioli. I think it was nice and light with all the veggies, but filling with the potatoes and fish. Will make again!
